Unlike the fiery chillies from South India, Kashmiri laal mirch is prized for its deep crimson colour and mild, fruity warmth — typically measuring just 1,500-2,000 Scoville units (compare that to cayenne at 30,000-50,000). It adds colour and depth to rogan josh, yakhni, dum aloo, and tandoori marinades without making the dish spicy.
